You probably tried roasted almonds while walking through Christmas market in December and drinking mulled wine. Or maybe you decided to make them as a snack and ate them in a minute while watching cheesy but lovable Christmas movies. Maybe you gave them to someone as a gift. But one thing’s for sure. We all connect roasted nuts with festive season. But then there are people like me, who are addicted to them, and can’t imagine eating them only in December. Exam period seems like an appropriate time to make a sweet snack. Or birthdays. Or a movie night and a romantic comedy. Believe me, there are lots of opportunities.
In Slovenia, you can only buy roasted almonds. I have never seen anyone selling roasted peanuts or cashews, maybe they aren’t so commonly associated with sweet foods. That’s why I got curious. And I decided to mix different nuts in this roasted nuts mixture. That’s everything I could find in a store and wasn’t previously salted. Harder than you think.
2 cups of almonds, peanuts, hazelnuts and cashew
1 cup of raw brown sugar
1/2 cup of water
1 tsp of cinnamon
Mix sugar, water and cinnamon in a pan and mix it until sugar dissolves. When it starts boiling, add nuts and mix it every few seconds. After 10-15 minutes, you will see a sugar coating forming on the surface of nuts and that is the time you must stir thoroughly so it gets evenly distributed. Then just place them on a baking paper and wait for them to cool.
