Hello again after a short break. I’ve been pretty busy last week. I’ve written my first exam this year and studying took a bit more time than I expected. I’m still waiting for the results, keep your fingers crossed :). So you see why I needed something sweet when weekend finally arrived. Something to put me back in the Christmas mood. And I had to try out animal-shaped cookie cutters I bought in Ikea in autumn, and didn’t find an opportunity to test them. Cookies seemed like a logical choice, especially for this extended (sick day off) weekend 🙂
I have to warn you that these cookies are so cute it’s harder to eat them than just look at them. My grandma still refuses to eat the moose-shaped cookie. But don’t get me wrong, they are also really good and they have that genuine Christmas taste. I had to have them for breakfast today 😀 After all, there are just nine more days till Christmas Eve! I had to test out the recipe before and I’ll probably test another version before Christmas. Holidays just can’t be holidays without a decent amount of cookies.
Okay, let’s talk food now. You’ll need:
1 1/2 cup of whole-grain spelt flour
1/2 cup of chopped almonds (or almond meal)
1/2 tsp of baking soda
1 tsp of baking powder
3 tsp of cinnamon
1 tsp of allspice
1 tsp of nutmeg
a dash of ginger
a dash of anise
1/2 cup of melted coconut butter
1/2 cup of raw brown sugar
1 tbsp of vanilla sugar (or vanilla essence)
1/4 cup of water
1/4 cup of coconut (or other non-diary milk)
2 flax eggs (1/4 cup of water and 2 tbsp of ground flax, leave it in a fridge for an hour)
Separately mix the first and the second group of ingredients and then just put it all together, thoroughly kneading the dough. Add more flour if the dough is too sticky and then roll it until it is 2-4 mm thick. Shape the cookies with cookie cutters and put them on a tray. Bake them for 20 minutes at 175 °C, until they are golden brown. With these ingredients, you can make 2-3 batches of cookies.
And for the finishing touch, you’ll need:
1/2 cup of dark chocolate pieces
1 tsp of melted coconut butter
1/4 cup of chopped almonds
Melt the chocolate together with coconut butter and use it to cover the cookies. Add some cranberries and sprinkle some almond meal over them. And there you have it! Wait for an hour so the chocolate dries a bit and then…”bon appetit”.
