Sacher cake

Kitchen time

As I am just in the ”getting ready for holidays and reading old recipes” mood, here is a recipe for a delicious Sacher Cake (best one of all I had tried:):

8 eggs
150 g of flour
150 g of bitter chocolate
150 g of butter
100 g of milled sugar
50 g of sugar (for the egg white snow)
2 spoons of coffee
bit of salt
1 small spoon of baking powder

First, melt the chocolate above boiling water. Then mix yolk, butter and sugar (for one yolk add some sugar) and after getting a clear mixture, add melted chocolate and coffee. Make snow from egg whites then softly mix it in the previous mixture along with flour (again, slowly: some egg white and some flour). You put everything in a cake baking dish and bake cake for 45-60 minutes at 175°C. After it gets cold, slice it up horizontally in two parts.

For decoration:
Soak the dough with mixture of 2 dl of water, 3 spoons of sugar and 2 spoons of rum (melt everything in water). Melt marmalade in a dish and spread it across the cake (middle, up and sides). Make a frosting from 1 dl of milk,1 chocolate and 1 spoon of butter (previously mixed in a dish and heated) and spread it over the cake. Let your imagination flow and add something new every time (like the slices of white chocolate on the picture).
